Beef Pho Bowl

In a large pot, combine beef broth, sliced ginger, halved onion, star anise, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 30 minutes to infuse flavors.
Strain broth through a fine sieve into a clean pot, discarding solids. Season with fish sauce and adjust seasoning to taste.
Bring a separate pot of water to boil and cook rice noodles according to package directions. Drain and divide among serving bowls.
Ladle hot broth into each bowl over cooked noodles. Arrange thin-sliced beef sirloin on top; the heat of the broth will gently cook the meat.
Top each bowl with green onion, fresh cilantro, bean sprouts, and sliced jalapeno. Serve immediately with lime wedges on the side.
