Black Bean Tacos

Dice the onion and bell pepper. Mince the garlic. Dice the tomato and chop the cilantro. Shred or chop the cabbage. Slice the avocado.
Heat olive oil in a skillet over medium heat. Add diced onion and sauté for 2 minutes until softened.
Add minced garlic and cook for 30 seconds until fragrant.
Add the drained and rinsed black beans to the skillet. Stir in the taco seasoning and cook for 5-7 minutes, stirring occasionally.
Add diced bell pepper and cook for another 3-4 minutes. Squeeze in the lime juice and season with salt and pepper to taste.
Warm the taco shells in a skillet or directly over a gas flame for about 1 minute per side until pliable and warm.
Spoon the black bean mixture into each warm taco shell.
Top with shredded cabbage, diced tomato, sliced avocado, cilantro, and crumbled queso fresco.
Serve immediately with salsa verde, pico de gallo, or additional lime wedges on the side.
