Ingredients
Method
Preheat oven to 400°F. Line a 9x13 inch baking sheet or pizza pan with parchment paper and brush lightly with olive oil.
Finely rice the cauliflower using a food processor or box grater until the pieces resemble rice grains.
Spread riced cauliflower on a clean kitchen towel or cheesecloth and squeeze firmly over a sink to remove excess moisture (this prevents a soggy crust). Repeat if needed until cauliflower is quite dry.
In a large bowl, combine the dried riced cauliflower, beaten eggs, mozzarella, parmesan, salt, black pepper, garlic powder, and Italian seasoning. Mix thoroughly until evenly combined.
Spread the cauliflower mixture evenly onto the prepared baking sheet, pressing it down firmly with the back of a spatula to form a solid, even crust about 1/4 inch thick.
Bake at 400°F for 25–30 minutes, until the crust is lightly golden and firm to the touch. Remove from oven and let cool for 3–5 minutes.
Spread sauce base evenly over the cooled crust.
Distribute cheese topping and any vegetable or protein toppings evenly over the sauce.
Return to the oven and bake at 400°F for 5–8 minutes, until cheese is melted and toppings are warm.
Remove from oven and let rest for 1–2 minutes. Slice and serve warm.
