Citrus-Marinated Mojo Chicken

Pat chicken dry with paper towels. In a mixing bowl, whisk together orange juice, lime juice, minced garlic, cumin, olive oil, diced onion, cilantro, salt, and black pepper.
Place chicken in a resealable plastic bag or shallow dish. Pour marinade over chicken, coating evenly. Refrigerate 20 minutes to 4 hours (longer for deeper flavor).
Remove chicken from marinade and pat dry; discard remaining marinade. Heat grill to medium-high (or preheat oven to 425°F). Grill chicken 6–8 minutes per side (or bake 18–22 minutes) until internal temperature reaches 165°F at thickest point.
Let chicken rest 5 minutes, then slice or serve whole.
Divide cooked rice among plates. Top with mojo chicken. Arrange grilled or roasted vegetables alongside. Garnish with fresh cilantro if desired.
