Method
Cut primary vegetable and root vegetable into bite-sized cubes; toss with 1 tbsp olive oil, salt, and pepper.
Spread cubed vegetables on a sheet pan and roast at 425°F for 25–30 minutes, stirring halfway, until edges are golden and tender.
Place cooked grain in a bowl; top with roasted vegetables, leafy green, and protein.
Drizzle dressing over the bowl and toss gently to combine.
Garnish with fresh herb, seeds, fruit or vegetable, and cheese if using; serve immediately.
