Tortellini Soup
A broth-based soup featuring cheese tortellini, vegetables, and a savory stock base. Comes together in one pot with simmered ingredients creating a warm, tender dish.

Method
Dice the carrot, celery, and onion into small, uniform pieces. Mince the garlic. Roughly chop the spinach and halve the cherry tomatoes.
Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery; sauté for 5 minutes until softened.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the vegetable broth and bring to a gentle boil. Add the tortellini and simmer according to package instructions, usually 4–6 minutes.
Stir in the spinach and cherry tomatoes. Simmer for 2–3 minutes until spinach is wilted and tomatoes are warm.
Season with salt and black pepper to taste. Stir in the grated parmesan.
Ladle into bowls and garnish with fresh parsley and additional parmesan cheese.
