Asian Slaw

Method
Slice napa cabbage into thin ribbons and place in a large bowl.
Julienne or shred carrot, slice cucumber into thin half-moons, and slice green onion. Add all to the bowl.
Prepare your chosen protein: press tofu and cube it, cook and shred edamame, drain canned chickpeas, cube tempeh, or cook shrimp until just done. Set aside.
In a small bowl or jar, whisk together soy sauce, rice vinegar, sesame oil, minced ginger, minced garlic, and lime juice until combined.
Pour dressing over the slaw and toss until evenly coated.
Top with your prepared protein and sprinkle sesame seeds over the surface.
Serve immediately while vegetables are still crisp, or cover and refrigerate for up to 1 hour.
