Ingredients
Method
Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package directions until al dente.
Drain pasta in a colander and rinse briefly with cold water. Spread on a plate or tray and let cool to room temperature, about 5 minutes.
While pasta cooks, dice the tomatoes and mozzarella into ½-inch cubes. Thinly slice the red onion and mince the garlic.
In a large mixing bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper until combined.
Add the cooled pasta to the vinaigrette and toss to coat evenly.
Gently fold in the diced tomatoes, mozzarella, red onion, and fresh basil until everything is evenly distributed. Taste and adjust seasoning as needed.
Serve immediately at room temperature, or chill for up to 4 hours. Give it a gentle toss before serving.
