Dice the onion and mince the garlic. If using optional celery or bell pepper, dice it into small pieces.
Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 4–5 minutes until softened and translucent.
Stir in the minced garlic and cook for 1 minute until fragrant. Add optional diced celery or bell pepper and sauté for 2–3 minutes more.
Add cumin and paprika, stirring constantly for 30 seconds to toast the spices.
Pour in the vegetable or chicken broth and add the drained black beans. Bring to a simmer.
Reduce heat to medium-low and simmer uncovered for 20–30 minutes, stirring occasionally, until flavors meld. The soup will be chunky; for a creamier texture, use an immersion blender to purée a portion and stir back in.
Stir in the lime juice and optional hot sauce. Taste and adjust salt and black pepper as needed.
Ladle into bowls and garnish with fresh cilantro, parsley, or green onion if desired. Serve hot.
