Bobotie
South African spiced meat casserole with ground meat, onions, and warm spices baked with a savory custard topping. The dish is assembled in a single baking vessel and finished until the custard sets to a light golden color.
Ingredients
Method
Preheat oven to 350°F. Soak bread slices in 1/2 cup milk or broth until soft, then squeeze gently and tear into small pieces; set aside.
Heat butter in a large skillet over medium-high heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute until fragrant. Add ground meat and brown, breaking it apart as it cooks, 8–10 minutes. Drain excess fat if needed.
Stir in garam masala, paprika, tomato paste, and chutney. Add the soaked bread pieces and lemon juice. Season with salt and white pepper. Mix until combined.
Transfer meat mixture to a greased 9x13 baking dish and smooth the top.
In a mixing bowl, whisk together eggs and remaining 1/2 cup milk or broth until smooth. Season lightly with salt and white pepper.
Pour custard mixture evenly over the meat layer. Bake for 30–40 minutes until the custard is set and light golden on top; the center should jiggle only slightly when shaken.
Rest for 5 minutes, then serve hot with rice, bread, or vegetables on the side.
