Broccoli Cheese Casserole

Preheat the oven to 350°F. Grease a 9×13 baking dish.
Bring a large pot of salted water to a boil. Add broccoli florets and cook for 4–5 minutes until just tender-crisp. Drain well in a colander and transfer to the prepared baking dish.
In a saucepan, melt butter over medium heat. Whisk in flour to form a paste; cook for 1 minute, stirring constantly.
Gradually whisk in milk, stirring until smooth and thickened, about 5 minutes. Remove from heat.
Stir in cheddar cheese, parmesan, salt, and pepper until fully melted and combined.
Pour cheese sauce over the broccoli and stir gently to coat.
In a small bowl, combine breadcrumbs with melted butter. Sprinkle evenly over the casserole. Dust lightly with paprika if desired.
Bake uncovered for 25–30 minutes until the topping is golden brown and the filling bubbles at the edges.
Let rest for 5 minutes before serving.
