Slice sausage into 1/2-inch rounds. Dice bell peppers and onion. Mince garlic.

Heat olive oil in a 12-inch skillet over medium-high heat. Add sausage slices and cook 5–6 minutes, stirring occasionally, until browned on both sides. Transfer to a plate.

In the same skillet, add diced onion and bell pepper. Sauté 4–5 minutes until softened. Add minced garlic and cook 1 minute until fragrant.

Stir in cajun seasoning and tomato paste, coating vegetables evenly. Cook 1 minute.

Return cooked sausage to the skillet. Pour in vegetable broth and hot sauce (if using). Bring to a simmer, then reduce heat to medium and cook 10–12 minutes uncovered, until the liquid reduces slightly and flavors meld.

Taste and adjust seasoning. Transfer to serving bowl or plates. Garnish with sliced green onion. Serve over rice, pasta, or with bread.
