Chicken Parmesan

Preheat oven to 400°F (200°C).
Place chicken breasts between plastic wrap and pound to even 1/2-inch thickness using a meat mallet or rolling pin.
Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with 0.5 cup parmesan, salt, and pepper.
Dredge each chicken piece in flour, shaking off excess, then dip in egg, then coat thoroughly with breadcrumb mixture, pressing gently to adhere.
Heat olive oil in a large oven-safe skillet over medium-high heat. Once shimmering, add chicken and fry 3–4 minutes per side until golden brown. Do not crowd the pan; work in batches if needed.
Return all chicken to the skillet. Spoon 2–3 tablespoons marinara sauce onto each piece, then top with mozzarella and remaining parmesan.
Transfer skillet to oven and bake 10–12 minutes, until cheese is melted and bubbly and chicken is cooked through (internal temperature 165°F).
Warm remaining marinara sauce. Divide cooked pasta or base among plates, top with a chicken breast and its cheese, drizzle with extra sauce, and garnish with fresh basil.
