Citrus-Marinated Shrimp Ceviche
Raw shrimp cured in citrus juice with lime, lemon, and orange, finished with fresh herbs and diced vegetables. Served chilled as a bright, acidic seafood preparation.

Method
Cut shrimp into 1-inch pieces and place in a non-reactive glass or ceramic bowl.
Pour lime juice, lemon juice, and orange juice over shrimp, stirring to coat evenly.
Cover and refrigerate for 45 minutes to 1 hour, stirring occasionally, until shrimp is opaque and firm throughout.
Drain marinated shrimp, reserving 1/4 cup of the citrus liquid.
Add diced cucumber, sliced red onion, minced jalapeño, cilantro, and green onion to the shrimp.
Drizzle with olive oil and reserved citrus liquid; season with salt and pepper. Toss gently and chill until ready to serve.
