Black Bean & Chorizo Skillet
A one-pan skillet dish combining black beans, chorizo sausage, and a swappable protein base. Proteins, vegetables, and aromatics are sautéed together and finished with broth and spices.

Dice the onion and bell pepper. Mince the garlic. Slice the chorizo into rounds or crumble. Drain and rinse the black beans.
Heat olive oil in a large skillet over medium-high heat. Add the chorizo and cook until browned, about 4–5 minutes, stirring occasionally. Remove and set aside.
In the same skillet, add the diced onion and bell pepper. Cook until softened, about 4–5 minutes. Stir in the minced garlic and cook for 1 minute until fragrant.
Add the cumin and paprika, stirring constantly for about 30 seconds to bloom the spices.
Return the cooked chorizo to the skillet. Add the black beans and vegetable broth. Bring to a simmer and cook uncovered for 8–10 minutes until the liquid reduces slightly and flavors meld.
Taste and season with salt and black pepper as needed.
Divide into bowls or plates. Garnish with sliced green onion and a squeeze of fresh lime juice if desired.
