Pat chicken dry with paper towels and season generously with salt and black pepper on all sides.
Heat butter in a large skillet over medium-high heat. Once foaming, add chicken and sear 4–5 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a plate.
In the same skillet (do not wipe), reduce heat to medium. Add diced red onion and cook 2 minutes until beginning to soften.
Add minced garlic and paprika, stir constantly for 30 seconds until fragrant.
Pour in chicken broth and honey, scraping up browned bits from the pan bottom with a wooden spoon. Simmer 2–3 minutes until slightly reduced and glossy.
Return chicken to the skillet, nestling it into the sauce. Simmer 3–4 minutes until heated through and sauce coats the chicken.
Transfer chicken and sauce to a serving bowl or individual plates over your choice of cooked rice, pasta, or roasted vegetables. Garnish with sliced green onion and serve warm.
