In a mixing bowl, combine ground beef, minced onion, breadcrumbs, egg, salt, and black pepper until just mixed—do not overwork the mixture.
Divide mixture into 4 equal portions and shape each into a patty about 1 inch thick.
Heat oil in a large skillet over medium-high heat. Once shimmering, place patties in the pan and cook for 4–5 minutes per side, until browned and cooked through (internal temperature 160°F). Transfer to a plate.
In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
Pour in beef broth, ketchup, and Worcestershire sauce. Stir well and bring to a simmer, scraping up any browned bits from the pan.
Add sliced carrot and onion to the sauce and simmer for 8–10 minutes until softened.
Return patties to the skillet and spoon sauce and vegetables over them. Simmer for 2 minutes to heat through.
Transfer patties to serving plates and pour sauce with vegetables over the top.
