Italian Sausage Pepperoni Bake

Preheat oven to 375°F. Cook pasta in salted boiling water until 1 minute under al dente; drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook 3–4 minutes until softened.
Stir in minced garlic and cook 30 seconds until fragrant. Add Italian sausage, breaking it into bite-sized pieces, and cook until no pink remains, about 5–7 minutes.
Stir in marinara sauce, pepperoni slices, Italian seasoning, red pepper flakes, salt, and pepper. Simmer 2 minutes to combine.
Add cooked pasta to the sausage mixture and toss to coat evenly. Transfer to a greased 9x13 baking pan.
Sprinkle shredded mozzarella evenly over the top, then finish with a layer of grated Parmesan.
Bake uncovered for 20–25 minutes, until cheese is melted, bubbling at the edges, and lightly golden on top.
Let rest 5 minutes before serving. Portion into bowls and drizzle with pan juices if desired.
