Italian Sausage Soup
Broth-based soup with Italian sausage, vegetables, and herbs. Simmered until vegetables soften and flavors meld, served hot.
Ingredients
Method
Dice onion, carrot, and celery. Mince garlic. Remove sausage from casing if needed.
Heat olive oil in a large pot over medium-high heat. Add sausage and cook, breaking it apart with a wooden spoon, until browned, about 5–7 minutes. Drain excess fat if needed.
Add onion, carrot, celery, and garlic to the pot. Sauté until softened, about 5 minutes.
Pour in vegetable broth and canned tomatoes with their juice. Stir in Italian seasoning. Bring to a simmer.
Reduce heat to medium-low and simmer for 15 minutes to allow flavors to meld.
Stir in drained cannellini beans and chopped spinach. Simmer for another 5 minutes until spinach wilts.
Taste and adjust seasoning with salt and black pepper. Ladle into bowls and serve hot.
