Lemon Butter Pasta

Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve 1 cup pasta water before draining.
While pasta cooks, melt butter in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
Remove skillet from heat. Stir in lemon juice and vegetable broth, then return to medium-low heat.
Transfer drained pasta to the skillet with the lemon-butter sauce. Toss gently, adding pasta water a few tablespoons at a time until the sauce is creamy and coats the noodles evenly.
Stir in half the grated Parmesan cheese. Taste and adjust seasoning with salt and black pepper.
Divide pasta among serving bowls. Top with remaining Parmesan, fresh parsley, and red pepper flakes if desired.
