Mexican Chipotle Turkey Meatballs

Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a large bowl, combine ground turkey, breadcrumbs, egg, red onion, garlic, cilantro, cumin, smoked paprika, red-curry paste, and salt. Mix gently with your hands until just combined, being careful not to overwork the meat.
Form mixture into 16–20 balls (about 1.5 inches diameter). Place on prepared baking sheet.
Drizzle meatballs lightly with olive oil and bake for 20–25 minutes, until internal temperature reaches 165°F.
While meatballs bake, whisk together Greek yogurt, lime juice, and green onion in a small bowl.
Transfer cooked meatballs to a serving platter. Serve warm with lime-cilantro sauce on the side or spooned over the top.
