Mexican Pozole Stew

Cut the pork shoulder into 1-inch cubes. Dice the onion, bell pepper, and zucchini. Mince the garlic and jalapeño. Juice the lime and chop the cilantro.
Heat olive oil in a large pot over medium-high heat. Season the pork with salt and pepper, then brown in batches for 3–4 minutes per side; transfer to a plate.
In the same pot, sauté onion and bell pepper until softened, about 5 minutes. Add garlic and jalapeño; cook 1 minute until fragrant.
Stir in cumin and oregano and cook 30 seconds. Return the browned pork to the pot.
Pour in vegetable broth and bring to a simmer. Cover and cook for 45 minutes until the pork is nearly tender.
Add the drained hominy and diced zucchini. Simmer uncovered for 20–25 minutes until the pork is fully tender and the stew thickens slightly.
Stir in lime juice. Taste and adjust seasoning with salt and pepper.
Ladle into bowls and top with fresh cilantro. Serve hot.
