Miso Glazed Salmon
A versatile Japanese-inspired main featuring miso-glazed salmon fillets paired with your choice of protein-rich grains and roasted vegetables. The umami-rich glaze caramelizes beautifully, creating a sweet and savory crust.
Ingredients
Method
Preheat oven to 400°F. Pat salmon fillets dry with paper towels and season lightly with salt and black pepper.
In a small bowl, whisk together miso paste, honey, rice vinegar, sesame oil, minced ginger, and minced garlic until smooth to create the glaze.
Cut your chosen vegetable(s) into bite-sized pieces, toss with olive oil, salt, and black pepper, and spread on one side of a large sheet pan.
Roast vegetables for 8 minutes until they begin to soften. Remove pan from oven and push vegetables to the sides.
Arrange salmon fillets skin-side down in the center of the pan. Brush each fillet generously with the miso glaze.
Return pan to oven and bake for 12–15 minutes until salmon flakes easily with a fork and the glaze is caramelized. (Thinner fillets may need 10–12 minutes; thicker ones 15 minutes.)
Divide your chosen grain among serving bowls. Top each with a salmon fillet, roasted vegetables, and accumulated pan juices.
Sprinkle with sesame seeds and sliced green onion. Serve immediately.
