Miso Soup

Method
Dice or cut your chosen protein into bite-sized pieces; chop leafy greens into ribbons; slice aromatics and optional vegetables into thin, even pieces.
Place miso paste in a small bowl and set aside.
Bring dashi or broth to a gentle simmer in a medium saucepan over medium heat. Add optional vegetables and ginger if using; simmer 3–4 minutes until softened.
Add protein and white parts of green onion (if using onion); simmer 2–3 minutes until just cooked through.
Ladle 1/2 cup hot broth into the bowl with miso paste and whisk until smooth and dissolved. Pour the miso slurry back into the saucepan and stir gently. Do not boil.
Add leafy greens and stir to wilt, about 1 minute. Taste and adjust miso seasoning as needed.
Ladle into bowls and garnish with sesame seeds, green parts of green onion, and any additional toppings. Serve immediately while hot.
