Bring a large pot of water to a boil for cooking the noodles. Meanwhile, prepare all toppings: slice green onions, blanch or sauté vegetables, soft-boil eggs if using, and thinly slice protein.
In a separate large pot, heat broth over medium-high heat. Add minced ginger, soy sauce, sesame oil, and oyster sauce if using. Simmer for 5–10 minutes to meld flavors.
If using raw or uncooked protein (chicken, pork, salmon, tofu), add it to the simmering broth and cook until just cooked through (10–15 minutes). If using pre-braised protein, keep warm on the side.
Cook ramen noodles in the boiling water according to package directions, usually 3–5 minutes. Drain and divide between two bowls.
Ladle hot broth and protein into each bowl over the noodles, dividing evenly.
Top each bowl with blanched vegetables, sliced green onion, sesame seeds, soft-boiled egg halves, and any other desired garnishes. Serve immediately.
