Mojo Pork

In a bowl, whisk together lime juice, orange juice, minced garlic, olive oil, cumin, oregano, salt, and black pepper to create the mojo sauce.
Place pork in a shallow dish or resealable bag. Pour half the mojo sauce over the pork, reserving the other half. Marinate for at least 15 minutes (or up to 8 hours in the refrigerator for deeper flavor).
Heat a large skillet over medium-high heat. Remove pork from marinade, shaking off excess, and sear for 4–5 minutes per side until golden and cooked through (internal temperature 145°F). Transfer to a plate.
In the same skillet, add sliced vegetables (bell pepper and onion). Sauté for 6–8 minutes until tender and lightly caramelized.
Return the pork to the skillet with the vegetables. Add the reserved mojo sauce and stir gently to coat. Warm through for 2–3 minutes.
Serve mojo pork and vegetables over your choice of rice, plantains, or other grains. Garnish with fresh cilantro and extra lime wedge if desired.
