Rinse the rice under cold water until the water runs clear. Drain and set aside.

Dice the onion and mince the garlic.

Heat olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 3 minutes.

Stir in the garlic, sofrito, cumin, and oregano. Cook for 1 minute until fragrant.

Add the drained black beans and 1.5 cups of vegetable broth. Stir in the bay leaf. Bring to a simmer and cook uncovered for 15–20 minutes, stirring occasionally, until the beans are creamy. Season with salt and pepper to taste.

In a separate pot, bring the remaining 1.5 cups of vegetable broth to a boil. Add the rinsed rice and a pinch of salt.

Reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender and liquid is absorbed. Remove from heat and let rest, covered, for 5 minutes.

Fluff the rice with a fork.
