Mojo Pork Grain Bowl
A customizable grain bowl built around citrus-marinated pork shoulder, served over a choice of grains. Combine with roasted vegetables and a bright mojo sauce for warm, balanced meals.

In a large bowl, whisk together lime juice, orange juice, minced garlic, olive oil, cumin, oregano, salt, and black pepper.
Add pork chunks to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or up to 24 hours.
Prepare your chosen grain according to package instructions; set aside and keep warm.
Heat a large skillet or Dutch oven over medium-high heat. Remove pork from marinade (reserve marinade) and sear in batches until browned on all sides, about 3–4 minutes per batch. Do not crowd the pan.
Return all pork to the pan, pour in reserved marinade, and bring to a simmer. Cover and reduce heat to low. Braise until pork is fork-tender, about 45–60 minutes, stirring occasionally.
While pork cooks, toss cubed vegetables with a light coating of olive oil, salt, and pepper. Spread on a sheet pan and roast at 425°F until caramelized and tender, about 25–30 minutes.
Divide cooked grain among serving bowls. Top each with braised pork, roasted vegetables, a generous spoonful of mojo sauce from the pan, and fresh cilantro.
Finish each bowl with a lime wedge and additional mojo sauce on the side.
