Plantain & Chorizo Breakfast
Crispy fried plantain slices paired with seasoned chorizo, served warm on a toasted tortilla or bread base. Customizable with protein, vegetable, and sauce variations.

Peel the plantain and slice it into 1/4-inch-thick rounds. Slice or crumble the chorizo.
Heat oil in a large skillet over medium-high heat. When shimmering, add plantain slices in a single layer and fry 2–3 minutes per side until golden and crispy. Transfer to paper towels.
In the same skillet, cook chorizo over medium heat until browned and cooked through, 4–5 minutes, stirring occasionally. Drain excess fat if needed.
Lightly toast the tortilla or bread. Arrange crispy plantain and cooked chorizo on top.
Top with red onion, cilantro, and a squeeze of lime juice. Serve with hot sauce on the side or drizzled over.
