Poppy Seed Chicken
Chicken breasts baked in a creamy poppy seed sauce with onion and garlic. Served over egg noodles or rice for a classic comfort dinner.

Preheat oven to 375°F. Pat chicken breasts dry and season both sides with salt and pepper.
Heat butter in a large skillet over medium-high heat. Brown chicken breasts on each side for 3–4 minutes per side. Transfer to a buttered 9x13 baking dish.
In the same skillet, sauté diced onion and garlic over medium heat for 3 minutes until softened.
Remove from heat. Whisk together sour cream, chicken broth, and poppy seeds in a bowl. Stir in the cooked onion and garlic.
Pour the sauce over the chicken breasts. Bake uncovered for 20–25 minutes until chicken reaches 165°F internally.
While chicken bakes, prepare egg noodles or rice according to package directions. Plate noodles or rice and top with chicken and sauce. Garnish with fresh parsley if desired.
