Ingredients

Basmati rice1.5 cups
Onion1 medium
Garlic3 cloves
Olive oil2 tbsp
Carrot1 medium
Celery1 stalk
Peas0.75 cup
Salt0.5 tsp
Black pepper0.25 tsp

Method

Rinse the basmati rice under cold water until the water runs clear, then drain thoroughly.

Heat olive oil in a medium saucepan over medium heat. Add the diced onion and cook for 3–4 minutes until softened and translucent.

Stir in the minced garlic and cook for 30 seconds until fragrant.

Add the diced carrot and celery; cook for 2–3 minutes, stirring occasionally.

Add the rinsed rice to the pan and stir constantly for 2–3 minutes, coating the grains with oil. You should hear a gentle crackling sound.

Stir in the garam masala, salt, and black pepper; cook for 30 seconds.

Pour in the vegetable broth and bring to a boil, stirring occasionally.

Reduce heat to low, cover the saucepan with a lid, and simmer for 15–18 minutes until the rice is tender and liquid is absorbed. Do not stir.

Stir in the peas and let them warm through for 1–2 minutes.

Remove from heat and let rest for 5 minutes, covered. Fluff with a fork.

Taste and adjust seasoning. Garnish with fresh chopped parsley and serve hot.
