Sausage and Kale Soup

Dice the onion, carrot, and celery. Mince the garlic. Remove kale stems and chop the leaves coarsely.
Heat olive oil in a large pot over medium-high heat. Add the sausage and cook, breaking it into chunks with a spoon, until browned, about 5–7 minutes. Drain excess fat if desired.
Add the diced onion, carrot, and celery to the pot. Stir and cook until softened, about 5 minutes.
Add the minced garlic and thyme. Cook for 30 seconds until fragrant.
Pour in the vegetable broth and bring to a simmer. Season with salt, black pepper, and red pepper flakes.
Add the chopped kale and simmer until wilted and tender, about 8–10 minutes.
