Smashed Cauliflower Burger
Vegetable patty made from mashed cauliflower, flour, and egg bound into a firm cake. Pan-fried until golden and crispy on the outside, served on bread with toppings and sauce.

Cut cauliflower into florets and bring a large pot of salted water to a boil. Add cauliflower and cook for 8–10 minutes until fork-tender. Drain thoroughly in a colander, pressing gently to remove excess water.
Transfer cauliflower to a large bowl and mash with a fork until chunky but cohesive. Stir in beaten egg, grated cheese, minced onion, garlic, paprika, salt, and black pepper until combined.
Divide mixture into 4 equal portions and form each into a firm, flat patty about 3/4 inch thick. Let rest for 2 minutes if time allows.
Heat olive oil in a large skillet over medium-high heat. Once shimmering, place patties in the pan and cook for 4–5 minutes until golden and crispy on the bottom.
Carefully flip patties and cook on the second side for 4–5 minutes until golden. Transfer to a plate lined with paper towels.
Toast bread if desired. Spread condiment on both halves. Layer leafy green, cauliflower patty, tomato slice, and raw onion. Close burger and serve warm.
