Souvlaki Bowl

Cut protein into 1.5-inch cubes and place in a bowl. Pour Greek lemon marinade over protein, toss to coat, and let sit for at least 15 minutes (or up to overnight for deeper flavor).
Meanwhile, prepare all vegetables: dice cucumber, halve cherry tomatoes, slice red onion and bell pepper. Cook rice or grain base according to package directions.
Thread marinated protein and bell pepper pieces onto skewers, alternating if desired. Preheat grill or grill pan to medium-high heat.
Grill skewers for 3–5 minutes per side, until protein is cooked through and vegetables are lightly charred (internal temperature 165°F for poultry, 145°F for pork).
Divide cooked rice or grain between bowls. Slide protein and peppers off skewers onto each bowl.
Arrange cucumber, tomato, and red onion around the bowl. Top with a generous spoonful of tzatziki, scatter kalamata olives and crumbled feta cheese, then finish with fresh parsley and a squeeze of lemon juice.
