Spiced Pear Sorbet
A frozen dessert made from pears, sugar, and warm spices like cardamom and ginger. The mixture is churned until smooth and creamy, served as a cold, scoopable frozen confection.

Peel, core, and roughly chop the pears. Crush the cardamom pods lightly with the side of a knife or in a mortar.
Combine water and sugar in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves, about 3 minutes. Add crushed cardamom pods and ginger. Remove from heat, cover, and let steep for 15 minutes.
Strain the sugar syrup through a fine-mesh sieve to remove cardamom pods and ginger solids. Discard solids.
Place pear pieces in a blender or food processor. Pour the strained syrup over the pears. Add lemon juice, salt, and vanilla extract. Blend until completely smooth.
Pass the pear purée through a fine-mesh strainer, pressing gently with the back of a spoon to extract all liquid. Discard any pulp. Refrigerate the strained mixture for at least 2 hours, or until very cold.
Transfer the chilled mixture to an ice-cream maker and churn according to the manufacturer's instructions, typically 20–25 minutes, until the sorbet reaches a soft-serve consistency.
Serve immediately for soft sorbet, or transfer to a freezer-safe container and freeze for at least 4 hours for scoopable texture.
