Spicy Korean Beef Grain Bowl

Mince garlic and ginger. Slice green onion, separating white and light green parts from dark green tops; reserve dark green for garnish. Thinly slice cucumber and red cabbage. Toast sesame seeds in a dry skillet over medium heat for 2 minutes; set aside.
If using rice or another grain, prepare according to package directions until tender; keep warm.
Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces with a spoon, until no pink remains, about 5–7 minutes. Drain excess fat if needed.
Stir in minced garlic, ginger, and white/light green parts of green onion. Cook for 1 minute until fragrant.
Add gochujang glaze, soy sauce, and sesame oil. Toss beef to coat evenly. Cook for 1–2 minutes until glaze clings to the meat and is warmed through.
Divide warm cooked grain between two bowls. Top each with spicy beef mixture.
Arrange cucumber slices, red cabbage, and reserved dark green onion tops around the beef. Sprinkle toasted sesame seeds over the top and serve immediately.
