Squash Casserole
Baked casserole of roasted squash, cheese, and onion layered in a buttered dish. Finished with a crispy breadcrumb topping and baked until bubbly and golden.

Method
Preheat oven to 350°F. Slice squash into 1/4-inch rounds and dice onion.
Butter a 9×13 inch baking dish and set aside.
In a large bowl, combine sour cream, shredded cheddar, salt, black pepper, and paprika.
Layer half the squash slices in the prepared baking dish, scatter half the diced onion over them, then spread half the cream-cheese mixture on top.
Repeat with remaining squash, onion, and cream mixture.
Mix breadcrumbs with grated Parmesan and dot the mixture across the top with remaining 1 tbsp butter cut into small pieces.
Bake uncovered for 40–45 minutes until squash is tender and the topping is golden brown.
Let rest 5 minutes before serving warm.
