If using fresh stone crab claws, ensure they are chilled. If frozen, thaw them in the refrigerator overnight or under cool running water until completely thawed.
Cut lemon into wedges and prepare your chosen sauce in a small serving bowl.
Fill a large pot with water (about 2 inches deep), add butter and salt, and bring to a gentle simmer. If steaming, add a steamer basket over the water.
Place stone crab claws in the steamer basket or directly into simmering water for 4–5 minutes if thawed (or 6–8 minutes if partially thawed), just until heated through. Do not overcook, as the meat becomes tough.
Meanwhile, prepare your chosen vegetable side: steam asparagus for 4–5 minutes, or roast other vegetables at 400°F for 10–12 minutes until tender-crisp.
