Tofu Power Bowl
A customizable grain and protein bowl built on a base of cooked grain, crispy or marinated tofu, and roasted vegetables. Assemble components in layers and top with sauce and garnish.

Press tofu between paper towels for 10 minutes to remove excess moisture. Cut into 3/4-inch cubes or crumble into bite-sized pieces.
Cut roasted vegetable (e.g., sweet potato) into 3/4-inch cubes. Measure fresh greens and chop fresh herb garnish; set aside.
Heat 1 tbsp oil in a large skillet over medium-high heat. Add tofu and cook 8–10 minutes, stirring occasionally, until golden on multiple sides. Season with salt and pepper. Transfer to a plate.
On a baking sheet, toss cubed roasted vegetable with remaining 1 tbsp oil, salt, and pepper. Roast at 425°F for 15–20 minutes until edges are caramelized and tender.
Divide cooked grain evenly between bowls. Top with fresh greens, roasted vegetable, and crispy or marinated tofu.
Drizzle sauce over the bowl. Sprinkle with toasted seeds and fresh herb garnish. Serve warm or at room temperature.
