Press the tofu block between paper towels for 10 minutes under a light weight to remove excess moisture. Crumble into bite-sized pieces.
Chop the primary vegetable and secondary vegetable. Mince the garlic.
Heat oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds until fragrant.
Add the secondary vegetable (onion, mushroom, etc.) and sauté for 3–4 minutes until softened.
Add crumbled tofu and the primary vegetable (greens, squash, etc.); cook for 4–5 minutes, stirring occasionally, until the tofu is lightly browned and vegetables are tender.
Divide warm grain between bowls. Top with the tofu-vegetable mixture.
Drizzle sauce over the bowl. Garnish with fresh leafy herbs and crunchy seeds. Serve with a lime wedge on the side.
