Tofu Stir Fry

Press the tofu between paper towels with a weight for 10-15 minutes to remove excess moisture. Cut into 3/4-inch cubes.
Slice all vegetables: bell pepper into strips, broccoli into florets, carrot into thin slices or julienne, and green onion into pieces. Mince garlic and grate ginger.
Whisk together soy sauce, rice vinegar, and honey in a small bowl. Set aside.
Heat 1 tbsp sesame oil in a wok or large skillet over medium-high heat. Add tofu cubes and cook until golden on all sides, about 5-7 minutes. Transfer to a plate.
Add remaining 1 tbsp sesame oil to the pan. Stir in minced garlic and ginger, cooking for 30 seconds until fragrant.
Add carrots and broccoli; stir-fry for 4-5 minutes until partially tender. Add bell pepper and continue cooking for 2-3 minutes.
Return tofu to the pan and pour the sauce over everything. Toss gently to coat and cook for 1-2 minutes until heated through.
Transfer to serving bowls and garnish with sliced green onion and sesame seeds. Serve immediately.
