Ingredients
Method
Preheat oven to 475°F (245°C). Pat pizza dough dry with paper towels and place on a pizza pan or lightly oiled baking sheet.
Wash and slice all vegetables: bell pepper, red onion, zucchini, mushrooms, and halve the cherry tomatoes. Mince the garlic and roughly chop the spinach.
Stretch or roll the pizza dough to fit your pan, creating a small rim at the edges. Lightly brush the crust with 1 tbsp of olive oil.
Spread the marinara sauce evenly over the dough, leaving the rim uncovered, using about 3/4 cup. Scatter minced garlic across the sauce.
Top with shredded mozzarella cheese in an even layer. Arrange all sliced vegetables on top: bell peppers, red onion, zucchini, mushrooms, and cherry tomatoes. Scatter fresh spinach over the top.
Drizzle remaining 1 tbsp olive oil over the vegetables. Sprinkle with Italian seasoning and a pinch of salt and black pepper.
Bake for 12-15 minutes, until the crust is golden brown and the cheese is melted and lightly bubbling.
Remove from oven and let rest for 2 minutes. Slice into 4 pieces and serve hot.
