Veggie Quesadilla
A customizable grilled quesadilla loaded with melted cheese and your choice of fresh vegetables, beans, and seasonings. Crispy on the outside, gooey and satisfying on the inside.

Method
Dice your primary vegetable, secondary vegetable, and prepare beans. If using canned beans, drain and rinse well.
In a small bowl, combine diced vegetables, beans, and cumin; set aside.
Heat oil in a skillet over medium-high heat. Once shimmering, place one tortilla in the skillet.
Spread half the cheese evenly over the tortilla, then distribute the vegetable-bean mixture on one half.
Top with remaining cheese, then place the second tortilla on top. Press gently with your spatula.
Cook for 2–3 minutes until the bottom tortilla is golden and crispy, then carefully flip using a wide spatula.
Cook the other side for 1–2 minutes until golden and the cheese is fully melted.
Transfer to a plate, garnish with cilantro if desired, and serve with salsa, guacamole, or sour cream.
