Ingredients

Bread1 baguette or 2 sub rolls
Cucumber1/2 medium
Cilantro1/4 cup
Jalapeño1 pepper
Lime juice1/2 tbsp

Method

Slice cucumber lengthwise into thin strips. Toss with lime juice and set aside.

If using fresh pickled daikon and carrot (store-bought or homemade), drain excess liquid. Slice jalapeño thin.

Mix mayonnaise with soy sauce in a small bowl until combined.

Slice baguette or rolls in half lengthwise. Spread mayo mixture on the inside of both halves.

Layer sliced protein on the bottom half, then drizzle with hoisin sauce.
