Vietnamese Banh Mi

Combine rice vinegar, sugar, and salt in a bowl. Stir until sugar and salt dissolve.

Slice each baguette lengthwise. Lightly hollow out a small amount of soft crumb from the top half to reduce sogginess.
Spread mayonnaise on the bottom half of the bread and hoisin sauce on the top half.
Layer the cooked or marinated protein on the bottom half, followed by pickled daikon and carrot.
Top with fresh cucumber slices and cilantro leaves.
Drizzle with sriracha if desired. Close the sandwich and serve immediately.
