Yakisoba

Cook soba noodles according to package directions, drain, and set aside.
Slice or dice protein, and prepare all vegetables (carrot, onion, cabbage); mince garlic and ginger.
Whisk together oyster sauce, soy sauce, rice vinegar, and sugar in a small bowl; set aside.
Heat oil in a wok or large skillet over high heat until shimmering.
Add protein and cook until just cooked through, about 3–4 minutes; transfer to a plate.
Add garlic and ginger to the wok; stir-fry for 30 seconds until fragrant.
Add carrot and onion; stir-fry for 2 minutes, then add cabbage and cook for 1 minute more.
Return protein to the wok, add cooked noodles, and pour in sauce; toss constantly until noodles are heated through and coated, about 2 minutes.
Divide between bowls and top with sesame seeds and sliced green onion.
