Baked Cod with Swappable Vegetables & Sauce

Preheat oven to 400°F. Line a 9×13 baking dish with parchment paper.
Chop your primary and secondary vegetables into bite-sized pieces (aim for roughly 1-inch chunks). Mince the garlic and zest and juice the lemon.
Toss prepared vegetables with 2 tbsp olive oil, half the minced garlic, lemon zest, salt, and pepper. Spread evenly on the prepared baking dish.
Pat cod fillets dry and arrange over the vegetables. Drizzle with remaining 1 tbsp oil, scatter remaining garlic on top, season with salt and pepper, and squeeze lemon juice over all.
Bake uncovered for 22–25 minutes, until cod is opaque and flakes easily with a fork, and vegetables are tender.
Transfer to serving plates, garnish with fresh chopped herbs, and drizzle with your choice of sauce or additional lemon juice.
