In a bowl, combine flour and salt. Make a well in the center and pour in olive oil and warm water/broth.
Stir until a shaggy dough forms. Knead by hand for 5–8 minutes until smooth and elastic, or let rest 10 minutes for easier handling.
Divide dough into 2–4 balls. Roll or stretch each into a flat round or oval about 0.25 inch thick.
While dough rests, prep your chosen protein, vegetables, and sauce. Have cheese and garnish ready.
Heat oven to 450°F (or heat a skillet/grill over medium-high heat).
Brush one side of flatbread lightly with olive oil. Place oil-side down on a hot skillet or baking sheet; cook 2–3 minutes until golden and puffed.
Flip flatbread and immediately spread sauce on the cooked side; top with protein, vegetables, and cheese.
If using oven: transfer to oven 2–3 minutes until cheese melts. If using skillet: cover and cook 2–3 minutes until second side is golden and toppings are warm.
Transfer to a cutting board, sprinkle with fresh herb, slice into wedges, and serve hot.
