Preheat oven to 375°F. If using frozen gnocchi, cook according to package directions until they float to the surface and hold for 1 minute; drain and set aside. If using fresh, repeat the same process.
Cook the chosen protein over medium-high heat until fully cooked and browned. Season with salt and black pepper. If using a vegetable, sauté it separately in a skillet with minced garlic until softened; drain excess liquid.
In a large mixing bowl, combine cooked gnocchi, cooked protein, sautéed vegetables, and sauce. Fold gently to coat evenly.
Transfer the mixture to a 9x13 baking dish. Spread into an even layer. Top with mozzarella cheese and parmesan cheese. Drizzle lightly with olive oil.
Bake uncovered for 25–30 minutes, until the cheese is melted and bubbly, and the top begins to brown.
Remove from oven and rest for 3 minutes. Garnish with fresh herbs if desired. Serve warm.
