Beef Bulgogi

Slice your chosen protein thin (about 1/4 inch), cutting against the grain if possible for maximum tenderness.
In a mixing bowl, whisk together soy sauce, sesame oil, brown sugar, minced garlic, ginger, rice vinegar, and half the green onions.
Add the sliced protein to the marinade and toss to coat evenly. Let sit for at least 15 minutes (or up to 8 hours for deeper flavor).
Heat sesame oil (or cooking oil of choice) in a large skillet over medium-high heat until shimmering.
Working in batches if needed, add marinated protein and cook 3–4 minutes per side until caramelized and cooked through. Transfer to a plate.
In the same skillet, quickly sauté your chosen vegetable(s) until tender-crisp, about 3–5 minutes. Return the protein to the skillet and toss to combine, cooking 1 minute more.
Divide your chosen serving base (rice, noodles, lettuce cups, etc.) among bowls or plates. Top with bulgogi and vegetables, garnish with remaining green onions and sesame seeds, and serve immediately.
